How to brew Hongkong style Milk tea:
Boil slightly over 1 cup of water in a metal pot over stove. That is 1 cup of
water plus about 10% to allow for water evaporation.
Add 1 teaspoon full of Hong Kong style tea leaves to the boiling water and cover
pot to boil for about another 5 seconds.
Turn off the heat but let the pot sit on the stove. The water continuing to simmer.
Please do not unnecessarily open the lid
After 4 to 5 minutes, open lid, stir slightly and cover pot again for 4 to 5 seconds.
Pour tea in a cup. If there is fine tea powder floating, stir tea slightly
towards the top portion. The tea powder will sink.
Add sugar to taste.
Add evaporated milk slowly and at the same time stir tea until you find the color
that best suit your taste. With experience you will know the color that suits you best
Let tea sit for a minute or two.
The perfect Hong Kong style milk tea is ready to serve.

Water Quality
- Tap water usually has a taste of chlorine and will affect the flavor of the tea
- Soft water or distilled water or spring water is best
Milk
- The traditional Hong kong style milk tea is served with Evaporated Milk.
This is available in all supermarkets and recently comes in 2% as well as full milk
- Some tea enthusiasts like the normal full milk, others the 2% milk.

Useful tips
- Do not use tea bag as it restricts the movement of the tea leaves and will not bring out the full flavor of the tea.Tea bags are expensive.
- Do not simply pour boiling water over tea in a cup and expect the perfect Hong Kong style milk tea. The tea must be boiled to some extent.
- Do not use excessive amount of tea for a given amount of water. One teaspoon full of tea is best for one cup of water. Slight variation is acceptable to suit individual taste.
- Do not use excessive or inadequate amount of milk. Experiment with the optimum amount for individual taste.

- Do not leave tea exposed to air or sunlight. Always keep airtight in a dry place. Do not keep in refrigerator.
